Valentines is fast approaching and whether you are spending it with a partner, husband, boyfriend, girlfriend, a bunch of friends, or your cat it doesn't mean it should be any less fun.
Valentine’s Day, a bit like Christmas, is a time when we may have a little bit too much to eat and drink. It's party season so it is to be expected. However, we want to look after our bodies and think and eat like slim, fit, healthy people. So, how can we find a middle point?
James and I have called on Vicky from Victoria's Beauty Foods and asked her to create some delicious and guilt free desserts for you all that will be a perfect for you no matter who you are planning on spending your Valentine’s Day with.
From a creamy coconut parfait to raw chocolate biscuits it's time to bin the boxes of chocolate and create some nutritious and delicious recipes that won't set you off track... because being good and looking after yourself doesn't mean being boring!
1 cup Blueberries
1/2 cup Strawberries
1/4 cup of Berries of your choice
1/4 cup Gluten Free Oats
1 tbs desiccated coconut
1 tbs Agave Nectar/Honey
1 Banana chopped
1 tsp Vanilla Extract
Blend the yoghurt of your choosing with the blueberries and vanilla extract. Add 1/4 of the chopped banana to the bottom of the glass and top with the oats. Pour the yoghurt mixture over the oats and add the strawberries and berries of your choice to decorate. Drizzle the agave nectar over the parfait and sprinkle the coconut oil over the top.
Leave to set for a couple of hours in the fridge or overnight.
Protein Date and Pear Smoothie
This smoothie is packed with superfood chia seeds and protein and tastes as sweet as heaven. Perfect for all of you craving something sweet, filling yet still healthy and low in calories.
1 Banana chopped
1 cup Almond Milk
1/4 cup Dates stones removed
1 Pear chopped
1/2 cup Crushed Ice
1 tbs Chia Seeds soaked in water for ten minutes
1 Tbs Maca Powder
Blend the banana, pear and dates with the protein powder, crushed ice and almond milk. Top with the chia seeds!
Gorgeous Granola Bars
Makes 6-8 bars
Gluten free rice crisps
1/4 cup Chia seeds
1 cup gluten free oats
1/2 cup agave nectar
1 tbs light tahini
1/2 cup cranberries and raisins
1/4 cup mixed seeds pumpkin, linseed, sunflower
1/8 cup almonds
1 tsp vanilla extract
Mix the dry ingredients in a bowl stirring thoroughly.
On a low heat mix the tahini and agave nectar in a pan for 2 minutes. Remove from heat and leave for 1 minute.
Pour the mix over the bowl of oats, dried fruits and seeds, it should be difficult to mix in the end add the vanilla extract at the end.
Using a baking tray lined with baking parchment, spread the mix over the tray. Using the palm of your hand or a rolling pin flatten the mixture out and place it in the freezer uncovered for ten minutes.
After ten minutes take out of the freezer cut into slices and serve!
